I think Emily really cares about Sean but she had to let him go because he is just an "Insurance Salesman." Sean just did not have the $$$ MONEY SIGNS $$$ over his head like Jef and Arie.
It's sad but I think Emily wants to marry for "comfort" MONEY and love this is a very hard combination. I wish Emily would rethink her final rose and call Sean back. He may or may not take her back.
I think she goes back to Sean. When confronted with the finale decision, she realizes the guy, who is as she termed, " the man of her dreams" was right in front of her and she let him go, its just to overwhelming and she chooses him; Sean! Even at the men tell all, she didn't give an answer to why she let him go. And Sean gave a generic response to her.
